Scentsy!!! Yummo! :)

Hi Everyone!

I have been doing something that I have yet to post about.
I became a Scentsy consultant! :)

I have been having sooo much fun!


 I thought I would take a quick minute to tell you why I became a Scentsy consultant.
   I went to my first Scentsy party about 10 years ago when they first started up and instantly fell in love!
   They had so many amazing scents to choose from. I had always used candles up until I discovered Scentsy and their beautiful warmers. I loved how candles smell, but had issues with soot, and worried about our pets and children getting burned. Not to mention the fire hazard. Once I found Scentsy, I became a wick-less girl and never looked back! They have a huge and ever evolving assortment of yummy scents to choose from, and my house always smells awesome...without the worry of having flames burning  :)


   I recently decided that I wanted to start a little side business that would get me out and around people more. Of course Scentsy came to mind right off! A product I have already loved for years. A fun way to meet new people and "party" with old friends. And I can do it when it works for my family's schedule.

  Scentsy's products have changed so much the last few years. Yes they still have a lot of the same style of  wonderful warmers with some variations, but they have also added gorgeous Lampshade, Silhouette, and Element warmers. There are lots of new scrumptious scents as well.
They also have a new line of Layers. Both for laundry and skincare!
Here are a few of my favorite new seasonal warmers.













I love it because it is something fun I can do to earn some extra money and still have lots of time for crafting! You can earn as much or as little as you would like, depending on the amount of time you want to put into it. The best thing is, you are your own boss. It is your business, so YOU decide when you can and can't work. Schedule parties around your family time.

Low Carb/High Protein Pumpkin Bread


Hi Everyone!
This fall weather has me in the mood for pumpkin bread.
Since my bariatric surgery, regular pumpkin bread is not on the menu, so created this version for hubby and I. It turned out very tasty, so I thought I would share. :)


This is the pan I used. Love my Kitchen Aid mini loaf pan! 
You could use a regular loaf pan or cupcake pan if you don't have a mini loaf pan. 

Trudy's Protein Pumpkin Nut Bread

Ingredients:
  • 1 (15 oz.) can pumpkin puree (not pie filling)
  • 1 c. Splenda (or other non-calorie sweetener)
  • 1/4 c. Torani Brown Sugar Cinnamon syrup
  • 2 eggs
  • 1 tsp. pure Madagascar Bourbon vanilla extract
  • 1 tsp. butter vanilla emulsion
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 c. low carb baking mix (I use Carbquick)
  • 1/3 c. vanilla protein powder (I use Isopure)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup chopped walnuts or pecans
Directions:

Pre-heat  oven to 350 degrees or 325 for dark non-stick cookware.

In a large mixing bowl, combine pumpkin, sweetener, syrup, eggs, and  flavorings Mix on medium speed for about 1 minute scraping bowl mid way.
Sift baking mix, spices, protein powder, baking soda, and salt directly into pumpkin mixture.
Mix just until well blended.
Add nuts and blend just until incorporated.

*Spray a mini-loaf pan with non-stick cooking spray (I use Baker's Joy)
Scoop equal amounts of the batter into each mini loaf, and spread evenly.

Bake at 350 for about 20-25 minutes or until a toothpick inserted comes out with a moist crumb. Allow to cool thoroughly before removing mini-loaves.
Wrap each loaf individually and refrigerate until ready to eat.

*If you don't have mini loaf pans, you may also use a full-sized loaf pan or a cupcake pans.
